is fun and heart warming, it is due to its simplicity and
practical techniques of cooking.
The practice of low country cooking is related
to winding clans and early settlers of North America. Over time
these have been refined and modern methods have simplified how
we cook, but the essence of low country cooking is not the same
as cooking in kitchens.

the freshness of the ingredients employed in cooking. All food

kitchens we pull out pre-cooked food from chillers lying in
cold storage for weeks and flavour food with packed and
ready-to use ingredients. low country cooking needs much more
ingenuity and creativity.

of a single family-based activity. Different folk do different
things to prepare the meal. The very first thing to be done is
to get the fire burning which is done out of doors, weather
allowing, on stones and wood collected from the forests. low
country cooking makes use of wild veggies, fruits, fish and
wild game from the badlands. On bad days, it's not strange for
the community to be partly or fully vegetarian.
low country cooking is frequently high in fat and
carbs as the community is generally involved in hard manual
work. The simplest way of cooking beef is roasting on skewers
over the flames. Roasting is elected to griddling as the oil
that drips from the beef can be picked up in a pan and reused.
Most country cooked dishes have flavours of the smoke on which
it is cooked. It takes time to get used to this hazy taste, but
the freshness of food surpasses all smell and taste.
In the earlier days, utensils employed in low country
cooking were especially of clay / earthen pots and wooden
spoons. The common way of cooking in country kitchens is a
straightforward covered pit with fire under it. Another common
system is wrapping food in clay and leaf wrapping. Banana
leaves are at length used as it doesn't burn simply over a
flame.
One very practical system is placing food on heated stones
or dropping a heated stone into a pot. Modern day low country
cooking now uses solar cookers. The outside low country cooking
activity unifies a community that works together, cooks
together and eats together. The helping, giving and sharing
creates lasting bonds of fellowship and love.
